I used to be a huge kid up until around high school, just around the time I moved in with my mom. She used to cook extremely simple, healthy, and delicious meals during my entire high school career that helped me get fitter and shed some weight (that I eventually gained back and then lost again; such is life). One of the great parts about spending time at her home this week—I haven’t done so since I was in my teens—is eating all the food I used to enjoy during high school. It’s usually really simple but crazy good.
